Mary Ajewole is a visionary chef, revolutionizing the culinary world.
Mary Ajewole started JE KOYO on a simple belief: that the food she grew up on deserved a room as considered as anything in London’s fine-dining scene. Years spent training in professional kitchens across the city taught her the discipline of service; years spent cooking at home taught her what the dishes were supposed to mean.
That tension between rigour and warmth is still the engine of the kitchen. Every recipe at JE KOYO is tested against two questions: does it honour where it came from, and does it meet the standard of the room it is served in. Neither is allowed to lose.
Mary now spends as much time on systems as she does on the pass — training standards, supplier relationships, and the documentation that lets a dish taste the same whether it is her hands on the pan or someone she has trained. JE KOYO is built to outlast any one chef, including its founder.
JE KOYO exists to give contemporary African cooking a room.
